| Chicken Breasts with Tuna Sauce |

Ingredients
for 4 servings:
• 500 g chicken breast
• 150 g leek
• 50 g celery
• 1 sprig parsley
• 2 tablespoons white wine
• 1 lemon
• 3 tablespoons milk
• 1/2 cup virgin olive oil
• 150 g Calvo Tuna in vegetable oil
• 1 tablespoon capers

Preparation
Wash the chicken breasts and leave whole.
Peel the leek, celery and the parsley. Place in a saucepan with 1 liter of water over heat, add the vegetables, wine, juice from half the lemon.
When it starts to boil, add the chicken breasts and cook over low heat for 20 minutes or until they are done. Remove chicken, drain and cool.
Make a mayonnaise with the milk, oil and remaining lemon. Add the tuna, saving some for garnish, and half of the capers. Beat until creamy and homogenous. Add a bit of the broth from the vegetables and chicken and set aside.
To serve the chicken, cut into slices and cover with the sauce. Sprinkle with capers and the remaining tuna. Accompany with steamed baby carrots or other garnish to taste. |
